Recipe - Sunrise Tofu Breakfast Scramble

This tofu scramble is a regular favorite in my kitchen. Both vegans, vegetarians, and even those without dietary restrictions love this breakfast dish. It has a slight kick, resembling the aroma and taste of eggs, but with an extra burst of flavor.

I personally prefer firm tofu, but I've noticed some people choose medium silky tofu for a softer scrambled egg texture.

There's no need to press the water from the tofu. The goal is to crumble the tofu into pieces that are large enough to be picked up with a fork or spoon. Cook the crumbled tofu in a small amount of your preferred oil to prevent sticking, but remember not to use too much oil, as the tofu already contains a lot of moisture.

As the tofu is sautéing, I prepare the accompanying recipe. It's designed for 1 pound of tofu, but feel free to adjust according to your taste preferences. I tend to cook my dishes on a low heat and slowly. This approach not only prevents me from burning anything while juggling multiple tasks in a bustling kitchen but also ensures that the tofu is evenly heated, allowing it to steam from the inside out.

 

1/2 C   milk of your choice.  I prefer to use Oat Milk, but I have done it with Soy Milk as well.

3 tbsp  Tofu scramble spice blend.  This is my base spice mixture and I sell it here on my website for those that do not have all the ingredients.

2 tbsp  Nutritional yeast.  This thickens up the mixture and adds more nutrition to recipe.

2 tbsp  Tahini.

 

Combine everything and let it sit until the tofu has released most of its moisture and reached your preferred consistency for tofu eggs.

With the heat still on low, add the mixture and stir until everything is thoroughly coated. At this point, you can either continue cooking on low heat until most of the moisture evaporates, or you can turn off the heat, cover it with a lid to keep it warm and moist, and let it rest for 5 to 10 minutes.

In my work kitchen, I transfer it to a pan and place it in the warmer. Letting it rest allows the flavors to meld more, ensuring an even taste throughout the dish with each bite.
